Another Saturday of getting out of the zoo... and guess what? I got to eat Swiss Waffles. 😎

🧇MIRA'S WAFFLES🧇

Another lovely Saturday autumn morning of getting out of the zoo. And we found a little sweet spot! I had heard about Switchback Coffee from a friend, and this small bouji shop on the corner of East Moreno Ave. Now I wasn't aware that there were two stores. I've only been to the Hill Side one, since that was the shop we found ourselves in.

Nestled in the college neighborhood over by UCCS and plenty of parallel parking which made Abby grumble. Nobody likes to parallel park. But we found a nice little spot with plenty of room away from other cars. At 0800 in the morning this little shop was already starting to get packed. But immediately the friendly atmosphere was what I noticed. Old friends met together, college group projects, and I noticed a US para-olympian there. Or at least she wore all USA olympic gear. Which reminded me that I really should go check out the newly opened museum and completed renovated park right outside of it off of I-25.

However, Abby and I seemed to come on the perfect day to have the privilege of meeting Rachel and Miranda founders and creators of Mira's Waffles. Now me being the social extrovert I am, and trying to build my own small entrepreneur endeavor on the side I wanted to know one important thing.
What inspired them?
Having an inspiration is important, a driving point. It centers your business and creates a story. Individuals enjoy stories, it connects them to something, or teaches them a lesson and allows them to grow.

Mira's Waffles was inspired by a trip that Miranda took to Switzerland and found a unique waffle delicacy which she brought back here. Buying one small waffle maker off of Amazon she started making her own. However, there is a twist, the recipe of the batter waffle is from her mother. Aka: tis' a secret. Mira's Waffle's however, takes fresh apples from a Colorado Springs local making the cinnamon, whipped cream, batter, and caramel by hand. Each weekend features different flavors, so you'll always have the pleasure of seeing something new. Abby and I made it to the Maple Waffle, and Caramel Apple day.

Peaches and Cream🍑
Lemon Cream 🍋
Strawberries and Chocolate. 🍓

Though you better hurry and snag some waffles while you can. They will be headed to Poland for a well deserved break! Who knows they might come back with another wonderful yummy idea from there too! Safe travels!
Definitely going to go back at least a few times in the winter months for a sweet that comes from the heart.
I asked them for one piece of advice in creating a business, and they simply both said, "Just go for it!" 😉
